Boerewors South African suasage

WE have had this for some of our events and folks have asked for the recipe. So here it is. Thanks to Pam and Ian for bringing this to us. I had fun making it and hope that you do also. Jan

Boerewors

 

8 Lb. of 100% Grass-fed Beef 

2 Lb of Pork fat

Grouse grind meat and fat.

 

Mix the following spices into the meat.

 

½ C red wine vinegar

1 - Garlic clove

4 – T Worchester sauce

1t – ground Pepper

2t - Salt

½ t of each Nutmeg, dried Thyme, ground Allspice

1/4t – ground Cloves

1C ground Crackers

 

Run this all through the fine grind.

Put into  #3 casing

Form spirals with the sausage.
