Spanish Pork Casserole

Spanish Pork Casserole

2-tablespoon olive oil
4 pork chops about 1 pound
1 onion chopped
2 garlic cloves chopped
½ cup dry white wine
4 plum tomatoes chopped
1 bay leaf
2 teaspoons chopped parsley
salt and black pepper

  1. Heat oil in deep fry pan and cook pork chops on high heat until brown on both sides. Remove to a plate.
  2. Saute over medium heat onion.
  3. Return the chops into the pan. Add the remaining ingredients to the pan and cover pan. Simmer for 30 minutes.
Serve with green salad and bake potatoes.
